自分では思いつかないようなレシピにチャレンジする1ヶ月

彼の仕事の関係で、1ヶ月Palo Altoに住むことになりました。
レンタルルームで暮らすので、ごはんは(ほぼ)毎日作るんだけど、材料や調味料はもちろんゼロから買いそろえなければ。

せっかくの機会なので、普段は作らないような、私にとっての「新感覚レシピ」でのお料理にできる限り挑戦する1ヶ月にしようと決めました。 

レシピ本はたくさん持っているけど、自宅のキッチンで普段使いの調味料や材料に囲まれているとなかなか「新感覚レシピ」には手を出そうとしないのが人の性。ついつい自分好みの、作る前から味が想像できるような、そして作りやすいものを作ってしまうからね。

参考にするのはこのレシピ。アメリカ発のレシピなので、Palo Alto滞在中なら材料も安く簡単に手に入るはず。デンマークに約1年住んでみて、お料理に関しては特に「郷に入れば郷に従え」精神が経済的メリットも大きいことを学びました:)



というわけで早速1皿目から記録していきます。
超シンプルな白食器しか登場しないのがちょっと残念だけども^^;

レシピ通りに仕上げたところで、スパイシーソースがとっても美味しかったので炊いておいたレンズ豆とキヌアを追加。ソースを程よく吸ってくれてボリュームたっぷりな一品に。

母と娘のお料理タイム!

先週土曜日は9月2度目のお料理レッスン。ゲストはマレーシアからのお二人。
お母さんと娘さんで参加してくださいました♪

お料理レッスンの時は、いつも私の母もチーム和キッチンとして手伝ってくれているので、今回はまさかのダブル母娘クッキングターイム!でしたw

娘さんは日本で仕事をしていて、今回ご両親が日本に遊びに来るから、ということでお母様が大好きなお料理を一緒にしたい、ということで和食レッスンに参加^^

お料理大好きなお母さんに、ほとんどの手順を進めてもらっていた娘さん。
私のほうでステップを説明させてもらう度に、「ほら、お母さん、やってやってっ!」って^^

ご両親は今回12日間の日本滞在。レッスンの翌日が滞在最終日って仰っていたので、「最後の日は何する予定?」って聞いてみたら、娘さんがすかさず「私の部屋の掃除!」って(笑)
お母さんも「結局そうなりそうだわね〜」ってニコニコされてましたよ(^^)

母娘の楽しいひとときを、ご一緒させてもらえてヨカッタです☆

Cooking lovers must go there

If you like cooking like me, I think you MUST visit Kappa-bashi(合羽橋)during your stay in Tokyo.

Kappa-bashi is the street and there are so many shops which provides cooking and kitchen tools such as plates, paper thing, pot, knives, cookie templates, chopstics and so on, I love this place very much!

There is not only for the consumars but also professionals like chef or manager of restaurant it means sometimes you can find and get staffs cheaper than the other place. When I go to Kappa-bashi, usually I need more than three hours to take a look for all the shops I'm interested in because there are tons of nice goods for cooking lovers. :)

I have thought that I want to introduce this place to all the guest of Nagomi Kitchen, but I have always forgot to take pictures because I always concentlate to my own shopping :D
But few weeks ago, my boyfriend's mother and aunt visited us from Denmark and we took them to Kappa-bashi so finally now I can introduce you my favorite place with many pics!

Many kind of design of tiny plates, it called "Mamezara" in Japanese. The price is just around 100-300 yen.

Tea pot, price is about 1,000 yen. You can find many kind of green tea easily at the supermarket and just put them into this pot with hot water.

If you visit Takayama during your trip in Japan, maybe you can find this one at there when you served original dish at Takayama, "Hooba-Miso".

 Kappa-bashi is nearby Asakusa (about 10 minutes on foot) so you can schedule to visit this wonderful place at the same day as Asakusa.

Kyaraben request

Before I started Nagomi Kitchen cooking lesson, I was thinking a lot about the lesson menus.

"What menu will be fun for tourist to experience Japanese cooking during their stay in Japan?"
"How can I provide the enjoyable cooking time to them?"

And when I was considering it, I believed that making kyaraben will be a one of fun thing for almost participant because I have enjoyed by myself very much.
(To be honest I have never cook kyaraben for a real lunchbox though but I knew taking photos of own creation was really exciting!)

So, I started kyaraben lesson from last year and many participants have already created their own kyaraben ;)



And few days ago, I received a request from guest who booked our kyaraben lesson for end of this month.
She want to create Nibbler kyaraben. (Nibbler is the character from FUTURAMA, do you know it?)



Actually it was first time for me to receive this kind of request, (in addition I have never seen this character before!) but I tried to make it.
How do you think about this Nibbler kyaraben?

I will cook it together with guest on end of March, and will pass the recipe for it :D

I love try to make new kyaraben, so if you want to make your favorite character with us, please let me know when you booking.

Of course I want to try but I guess there is some character which is completely impposible to create as kyaraben so I will inform you if I can do that or not after receiving a request!

Takoyaki

Takoyaki is one of my favorite Japanese food and I think a lot of Japanese people like it! It's a grilled octopus balls.



Mix flour, eggs and water (sometimes use dashi stock) then fry it in the special pan, put the boiled octopus and keep turning them until they are round shapes. Place it on plate, and pour the Takoyaki sauce, mayonnaise, seaweed powder and bonito flakes.

It's so yummy! I highly recommend you to try it when you are in Japan even if you feel "I don't want to eat Octopus" ;)

If you go to Osaka, you can easy to find Takoyaki shop and get it approx. 6-8 Takoyaki balls for 500 yen.

Takoyaki is very popular especially at Osaka and people have own Takoyaki plate at their house so that they can enjoy their selves. (Since to make it shapes round, you need special pan to cook Takoyaki)



If you are interested in trying Takoyaki, join home visit program and visit Adachi family :)
Now they live in Tokyo but originally come from Osaka, so you can enjoy real home-made Takoyaki with them! They will tell you some tips how to make delicious Takoyaki :)



Not only will you be able to explore new dishes, home visit program will be a fantastic opportunity to have a meaningful cultural exchange or practice your Japanese skills. Think of it as a short home-stay program for those who do not have the time but still want the experience. There are families that welcome visitors during the day at lunch too so check through your schedule to see if you can find some time for a nice Home Visit.

Osechi - dish for celebrate new year in Japan おせち料理と今年の抱負

Happy new year!



In Japan people eat traditional meal on new year days.
This meal called as Osechi and it's variety kind of dishes and serves in a bento-box style plate.

People eat this Osechi with family and friends to celebrate new year.
I cooked Osechi for this year! We can also buy Osechi at department store, supermarket or even via internet in these days
but I tried to cook it with my sister on 31st Dec.

Datemaki Tamago 伊達巻きたまご - Rolled up sweet omlet



I love this sweet omlet very much! Originally my grand mother bought us a special Datemaki every year so my favorite taste of Datemaki is not a homemade but I wanted to try to cook by myself.

Kuromame 黒豆 - Sweet black beans



Cooking this dish takes a long time but we use pressure pot for this time so could save the time lot ;)

All menu for Osechi has meaning and shrimp meaning "live a long time" because hip of shrimp stoop such as old man.

Kurikinton 栗きんとん -Sweet potato with chestnut



Kurikinton is my favorite Osechi menu as well. My mother made it every year when I was child :) This is the sweet potato colored with brilliant yellow and put in some chestnut.

Typically this Osechi cooked a lot and have eaten for some days but we didn't cook a lot for this time so it have been finished after few hours from 12:00 on Jan. 1st ;)

明けましておめでとうございます!

今年は妹ちゃんと一緒におせちを作りました:)
ほぼ初挑戦の割には、どれもスムーズに仕上がって嬉しかったー(^〜^)
伊達巻きたまごは子供の頃から祖母が毎年買ってきてくれてたものが一番美味しいので、思い出の味は手作りの味ではないのですが、今年はその味を目指して作ってみましたよ☆ それなりに美味しくできたけど、あの甘さ、舌触り、再現したいなー!

去年はフードコーディネーターの学校を皮切りに、和キッチンを興すことができました。1人ではじめた事に対して、周りのたくさんのみなさんに応援してもらい支えてもらい、おかげさまで、フードツーリズムに関わりたいな〜って漠然と思い描いていた去年の今頃のイメージが、少しだけ実現できました。本当にありがとうございました!

昨年夏から走り始めた和キッチン、今年は多くの訪日客のみなさんに楽しんでもらえるように、仕組みをどんどん整えていきたいと思っています。
また、去年はサボりがちだったデンマーク語も、やっぱり少しは話せるようになってみたいので、勉強再開しようと思います。

そして365日、毎日を楽しみながら大切に過ごせるように、意識して過ごしていきたいです!

Make your own Kyaraben

Are you interested in kyaraben?
Join our program on October 21st (Friday) 19:45-22:30 at Tokyo :)



Making a basic healthy Japanese bento box for your next lunch is already a creative process but a kyaraben will definitely add a little more fun.

In a kyaraben, the food in your bento can look like cute cartoon characters, animals, or even beautiful plants. Making a kyaraben used to be just a trick to get children excited about eating their bento but it has now turned into an art form where even competitions are held. It’s popularity has actually spread across the globe but there is always room to recruit more kyaraben enthusiasts.

In this program you will learn how to make either a Hello Kitty or Pokemon kyaraben. Please make sure to indicate which kyaraben you would like to make at the time of your booking. You will also learn how to make healthy tofu balls, flowers out of cherry tomatoes, and sunflowers out of small sausages.

The program is held in the Cookpad office kitchen near Shirokanedai Station in Tokyo. This office is the ideal location to learn about everyday Japanese food as it is where Japan’s largest recipe sharing site is created and managed.


Program Details:

1. Meet inside the Cookpad office
2. Recipes will be handed out followed by a short explanation
3. Cook while following instructions
4. Take pictures of your creations
5. Eat your creations with your fellow participants
6. Say goodbyes and leave

* Place: Kitchen at cookpad (6 mins walk from Shirokanedai Station on the Toei Mita Line or Nanboku Line)
* Price: 3,500 yen per person

50レシピ完成♪

Cookpadにレシピを投稿し始めてはや3年目。
50レシピが完成しましたー!

・・・って、ペースとしてはノロノロだし、わざわざブログで報告するほどの数でもないけども^^;
今年はペースを早めて、2011年中に100レシピ公開を目指したいな〜☆

時々届くつくれぽも合計で28になりました。やっぱり「レシピ美味しかった」って言ってもらえるのは嬉しいです(^〜^*)

去年までのレシピは、オフィスで手作りランチしてた頃のルクエを多用したレシピが圧倒的。
レンジで簡単に作れる、ということもあってつくれぽもらえるのもこのあたりのレシピ。

英語レシピの用語はまだまだ知らない言葉やちゃんと使えない表現が多いので、ABCLoopでチェックしてもらいながら、練習しつつ、という感じ。
英語のレシピもたくさん作ってアップしていくのも、今年の目標!

先日MOLESKINEのレシピジャーナルをプレゼントしてもらったところだし、多いに活用していきたいわ☆
